La temperatura alta del proceso (hasta 90\u00b0C) generaba un secado excesivo de la carne, con un impacto negativo en las propiedades organol\u00e9pticas del producto. Adem\u00e1s, las variaciones y los aumentos en los flujos de elaboraci\u00f3n pod\u00edan causar una sobrecarga del horno, haciendo heterog\u00e9neo el tratamiento t\u00e9rmico y, por tanto, inconstante el nivel de reducci\u00f3n de carga microbiana.<\/p>\n\n\n\n<div style=\"height:25px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>En busca de una soluci\u00f3n m\u00e1s eficiente y capaz de garantizar est\u00e1ndares m\u00e1s altos de calidad y seguridad microbiol\u00f3gica del producto, Naba Carni ha entrado en contacto con STALAM y los responsables t\u00e9cnicos de sus empresas han colaborado poniendo a punto en poco tiempo un protocolo de pasteurizaci\u00f3n RF adecuado para el producto y los tipos de embalaje comercial utilizados. Tras ello, se ha realizado el suministro de una planta industrial STALAM de la serie <strong><a href=\"https:\/\/www.stalam.com\/es\/alimentario\/pasteurizacion-y-esterilizacion\/pasteurizadores-para-productos-envasados-sanipack\/\">SANIPACK+<\/a><\/strong> para la nueva l\u00ednea de producci\u00f3n de Naba Carni en la planta Europe Meat de Resana (TV).<\/p>\n\n\n\n<div style=\"height:25px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>\u201c<em>Gracias al sistema de radiofrecuencia <strong><a href=\"https:\/\/www.stalam.com\/es\/alimentario\/pasteurizacion-y-esterilizacion\/pasteurizadores-para-productos-envasados-sanipack\/\">SANIPACK+<\/a><\/strong>, el proceso ahora es r\u00e1pido y uniforme, con significativos beneficios para toda la cadena de producci\u00f3n\u201d<\/em>, afirma Paolo Cavasin, Director General de Naba Carni. <em>\u201cLos hilos se tratan a temperaturas m\u00e1s bajas y en menos tiempo, eliminando el riesgo de secado excesivo y aumentando el rendimiento ponderado del producto<\/em>\u201d.<\/p>\n\n\n\n<div style=\"height:25px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Michele Bicego, Responsable de I+D de Stalam, confirma: \u201c<em>Despu\u00e9s de algunas pruebas, hemos puesto a punto un ciclo operativo que ha permitido alcanzar la temperatura objetivo de manera uniforme en pocos minutos. El producto final se mejora de manera significativa, tanto desde el punto de vista est\u00e9tico (la carne mantiene un bonito color rojo vivo) como desde el de la calidad en relaci\u00f3n con el tratado con el sistema convencional.
