Luigi Bertagni, junto con sus hermanos Ferdinando y Oreste, no solo se dedica a hacer tortellini frescos de alta calidad, sino que tambi\u00e9n ha desarrollado un m\u00e9todo para envasarlos y conservarlos.<\/p>\n\n\n\n<p>Gracias al esp\u00edritu emprendedor de los hermanos Bertagni, sus tortellini los apreciaban cada vez m\u00e1s en Italia y en el extranjero. Los hermanos Bertagni presentaros sus pastas en numerosas ferias mundiales y han obtenido los siguientes galardones: medalla de bronce en la Feria Mundial de Par\u00eds de 1889 y en la Feria de Chicago de 1894, y la medalla de oro en San Luis en 1904.<\/p>\n\n\n\n<p>En la actualidad, Bertagni 1882 est\u00e1 presente en m\u00e1s de 50 pa\u00edses y vende sus productos a trav\u00e9s de las mejores tiendas de alimentaci\u00f3n.<\/p>\n\n\n\n<p>El reto<\/p>\n\n\n\n<p>Antes de comprar el descongelador RF de Stalam, el proceso de descongelaci\u00f3n se llevaba a cabo en cuartos con una temperatura controlada (alrededor de +8\u00b0C). Los alimentos congelados los colocaban en recipientes y los dejaban descongelar a temperaturas positivas durante 3-7 d\u00edas, dependiendo del producto.<\/p>\n\n\n\n<p>El largo tiempo de descongelaci\u00f3n causaba una p\u00e9rdida por goteo de un 5-7 % y se desperdiciaban cientos de kilos de producto por semana debido a la cantidad excesiva de alimentos descongelados. Adem\u00e1s, debido a la falta de flexibilidad del sistema, a menudo, la empresa ten\u00eda que rechazar pedidos de \u00faltima hora porque que no pod\u00edan descongelar la materia prima a tiempo. De hecho, las verduras tardaban 3 d\u00edas en descongelarse, mientras que la carne y el pescado necesitaban 6-7 d\u00edas.<\/p>\n\n\n\n<p>Una persona se ocupada del proceso de descongelaci\u00f3n durante 4-5 horas por turno.<\/p>\n\n\n\n<p>La soluci\u00f3n<\/p>\n\n\n\n<p>Con el equipo de descongelaci\u00f3n RF de Stalam, el proceso de calentamiento es uniforme y controlado. Los alimentos congelados alcanzan un templado uniforme en 10-30 minutos sin p\u00e9rdida por goteo y de esta forma se aumenta el rendimiento del producto. Bertagni solo puede descongelar la materia prima necesaria para el tratamiento, evitando desperdiciar el producto, y ahora es capaz de manejar pedidos de \u00faltima hora. Adem\u00e1s, la calidad de la pasta rellena aument\u00f3 en t\u00e9rminos de sabor y consistencia.<\/p>\n\n\n\n<p>Por \u00faltimo, pero no menos importante, la empresa ha podido obtener un importante
