Meat defrosting – Success Story

The challenge

Our customer is one of the world’s largest pork processors and hog producers. In one of their facilities in Eastern Europe, defrosting was carried out in a conventional way by forced air circulation. The whole process used to take 1-2 days, leading to uneven temperatures that negatively affected the following production steps.

The solution

Thanks to our COLDWAVE+ defrosting equipment, our customer has obtained several benefits. First, the defrosting time was reduced from 1-2 days to 20-30 minutes, with huge benefits in terms of flexibility in production schedule. A 5% increase in product yield was also achieved, particularly on sliced products like pork neck, thanks to a better precision and consistency in the cut.

Moreover, it was possible to increase the percentage of frozen meat used overall, thanks to the quick, safe and reliable defrosting system.

In 2019 our customer purchased a second RF defrosting equipment, confirming Stalam as the preferred partner for this specific process.
